Colombia - El Puente - Natural Process
Nicaragua - Cafetos Segovia - Washed Process 

Light - Medium Roast: This is Epiphany's third seasonal winter offering and we knew finding a the perfect match for Valentines season was a must! 

Nicaragua - Cafetos Segovia - Washed Process:

Cafetos de Segovia, founded by sisters Ana and Martha Albir, is a third-generation coffee enterprise located in the highlands of Nueva Segovia, Nicaragua. This region, particularly the Cordillera de Dipilto and Jalapa, is renowned for producing high-quality specialty coffees. The Albir sisters continue their family's legacy by fostering transparent and socially responsible connections with local coffee farmers. 

The washed processing method employed involves meticulous steps to ensure clarity and purity in the cup. Ripe coffee cherries are handpicked and floated in upcycled water to remove any defective beans. After pulping, the beans undergo a 36-hour rest period, followed by washing and drying. This process accentuates the coffee's inherent characteristics, resulting in a clean cup with a balanced profile. 

Flavor-wise, coffees from this region often exhibit smooth chocolate and nutty notes complemented by sweet citrus undertones.  

Colombia - El Puente - Natural Process:

Aromas del Sur is a collective of farms—including La Loma, El Progreso, Monteblanco (Epiphany Coffee's first single-origin offering in 2021), and others—situated in Pitalito, Huila, Colombia. Owned by husband-and-wife team Claudia Samboni and Rodrigo Sanchez, these farms benefit from the region's rich coffee-growing heritage. Epiphany Coffee has been purchasing coffee from this coffee producer power couple since we started roasting coffee in Boise Idaho 4-years ago!

In 2018, Clearpath Coffee established the El Puente ("The Bridge") community processing facility in Palestina, Huila. This facility serves as a vital link between local smallholder producers and the global specialty coffee market. By providing access to advanced processing infrastructure, El Puente empowers farmers to enhance the quality of their beans and achieve better market prices. 

The natural processing method at El Puente involves drying whole coffee cherries, which imparts a distinctive sweetness and complexity to the beans. This technique often results in vibrant fruity flavors and a fuller body, enriching the coffee's overall profile.

By blending these two exceptional coffees, Polarity offers a harmonious fusion of the rich, fruity notes from the Colombian beans and the smooth, chocolatey undertones of the Nicaraguan beans, creating a unique and delightful tasting experience.

About the Artist:

Julie Stokes is an Idaho-based artist whose work is deeply influenced by her adventures in rock climbing, rafting, backpacking, and hiking with her dog, Blue. Her creative journey led her to establish Design Camp Sticker Co., a Boise-based company dedicated to crafting custom and wholesale vinyl stickers that capture the essence of outdoor exploration. Through Design Camp, Julie aims to reflect the unique visions of her clients, providing high-quality, durable, and waterproof stickers that resonate with adventurers and nature enthusiasts alike. 

In addition to her work with Design Camp, Julie's artistic repertoire includes a variety of nature-inspired paintings and metal sculptures. Her pieces often depict serene landscapes and wildlife, inviting viewers to immerse themselves in the beauty of the natural world. Julie's art has been featured on platforms like Fine Art America, where her paintings are available for purchase. 

For the Polarity coffee blend, Julie designed a label inspired by the majestic Tetons, encapsulating the spirit of the West and the allure of the great outdoors. This collaboration not only highlights her artistic talent but also supports her creative endeavors, as 10% of all sales from the Polarity blend are directed back to her.
